Mason Jar Method: Place the Red Clover blossoms and Stevia in a 2-cup or 1-liter mason jar. Add the 2-3 cups boiling water. Put on the lid and screw cap and let sit 30 minutes to 4 hours. Use a fine mesh sieve and strain out the liquid. Squeeze the plant material to extract all of the liquid. For a nice warm Earl grey tea, warm the infusion in a glass or ceramic pot, and add to a mug with a spot (or more) of your favorite non-dairy milk. You can make a second infusion, if you like, using 2-3 cups more boiling water and then infusing for 1/2h up to 4 hours.
Pot Method: Add the Red Clover flowers and Stevia to a glass or ceramic pot with 2-3 cups of water. Let come to a boil, then take off the heat and let sit, covered, 30 minutes to 4 hours. Strain. Drink warm, with non-dairy milk if you like. If you want to make an additional pot of tea, add the strained herbs back into the pot with 2-3 cups more water. Let come to a boil, then let sit 30 minutes to 4 hours.
Red Clover blossoms are just lovely wild flowers. They are nitrogen fixers, they attract beneficial insects to the garden, they are edible (both flower and leaf, being in the legume family), and they have medicinal properties.
An infusion of Red Clover flowers tastes like a wonderful cup of Earl grey tea, but it's even better than regular ol' Earl grey tea because it offers up a host of benefits:
The recipe provided here makes for a strong brew. If you find the infusion too strong to your liking, simply dilute with water. You can also drink the infusion cold and omit the non-dairy milk.
For a standard infusion (and less strong tea), use 1 ounce Red Clover blossoms in a 1 liter mason jar + 4 cups of boiling water poured to the top and let sit, with the cap on, for 4-8 hours. Strain. You can then add any sweetener and non-dairy milk, or simply drink as is. Feel free to make a second infusion that will be less potent, but still taste nice, with 4 more cups boiled water.
Remainders will keep in the fridge up to 3 days.
